Budget-friendly winter pudding cooked in a slow cooker for convenience. Great for family dinners.
Ingredients:
  • 100g butter, softened
  • 30.00 ml lemon rind, finely grated
  • 4 eggs, separated
  • 400ml can coconut milk
  • 193.13 gm milk
  • 131.25 gm lemon juice
  • 75.00 gm self-raising flour
  • Icing sugar, to serve
  • Lemon zest, to serve
Instructions:
  • Preheat your oven to 180C/160C fan-forced and generously grease a 20cm x 30cm (8-cup-capacity), 6cm-deep ovenproof dish.
  • With an electric mixer, whip butter, sugar, citrus rind, and egg yolks for 5 minutes until light and creamy. Slowly drizzle in coconut milk, regular milk, and juice. Beat until mixture is smooth. Sift flour over the butter mixture and gently fold until just combined. Clean the beaters for further use.
  • Beat egg whites with an electric mixer until soft peaks form. Gently fold them into the butter mixture. Pour the combined mixture into the prepared dish and bake for 35 to 40 minutes until golden and almost set. Sprinkle with icing sugar and lemon zest before serving.
