Lemon slice: a delightful treat for tea time.
Ingredients:
  • 250g milk arrowroot biscuits
  • 125g unsalted butter, melted, plus extra 1 tbsp softened unsalted butter
  • 150g condensed milk
  • 90g desiccated coconut
  • Zest and juice of 1 lemon
  • 300g icing sugar
  • Toasted coconut flakes, to sprinkle
Instructions:
  • Prepare a 20cm square pan by greasing and lining it with baking paper, making sure to leave plenty of overhang on the sides.
  • Pulse biscuits in a food processor until fine crumbs form. Add melted butter, condensed milk, desiccated coconut, and lemon zest. Blend until mixture is thoroughly combined. Firmly press mixture into pan and refrigerate for 2 hours until set.
  • Prepare the icing by mixing together icing sugar, lemon juice, and the remaining 1 tablespoon of softened butter in a bowl until silky smooth.
  • Frost the slice with icing and top with toasted flaked coconut. Let it set for 1 hour before cutting into 12 rectangles.
