Whip up a refreshing lime and lemon coconut slice for a tasty snack!
Ingredients:
  • 125g butter, softened
  • 220.00g caster sugar
  • 1 free range egg
  • 150g plain flour
  • 40g desiccated coconut
  • 75g butter, chopped
  • 165g caster sugar
  • 1 free range egg, whisked
  • 3 tsp finely grated lime rind
  • 60ml lime juice
  • 2.50 gm cornflour
  • 160g desiccated coconut
  • 75g shredded coconut
  • 2 Free Range Eggs, lightly whisked
Instructions:
  • Preheat the oven to 180C and generously grease a 19cm x 29cm slice pan. Line the base and two long sides with baking paper, making sure to leave some overhang on the sides for easy removal later.
  • In a small saucepan over medium-low heat, combine butter, sugar, egg, lime rind, lime juice, lemon juice, and cornflour. Cook and stir constantly for 5 minutes until the mixture boils and thickens slightly. Remove from heat and let it cool and thicken.
  • Using an electric mixer, cream the butter and sugar until light and creamy. Mix in the egg until well combined. Fold in the flour and coconut. Spread the mixture over the base of the prepared pan and bake for 20 minutes, or until lightly golden.
  • Evenly spread the curd on the base. For the coconut topping, mix coconut and sugar in a bowl, then add the egg and combine with a fork. Sprinkle the mixture evenly over the curd and gently press down with a fork. Bake for 20 minutes until golden and set. Let it cool completely, then cut into pieces.
