Vegan avocado ice cream with creamy coconut milk, zesty lemon and lime for a refreshing treat. Top with toasted coconut for extra crunch!
Ingredients:
  • 3 ripe avocados - halved, pitted, and peeled
  • lemons, juiced
  • 2 limes, juiced
  • 1 lemon, zested
  • 1 lime, zested
  • 1 (14 ounce) can unsweetened coconut milk
  • 1 cup agave nectar, or more to taste
  • 0.25 cup corn syrup
Instructions:
  • Combine ripe avocados, tangy lemon and lime juice, and fragrant zest in a food processor; blend until creamy. Then add creamy coconut milk, sweet agave nectar, and rich corn syrup; blend until silky smooth. Chill the mixture in the refrigerator for a minimum of 1 hour.
  • Transfer the creamy avocado mix into the ice cream maker and churn as per the ice cream maker's directions.
