Indulge in a rich and creamy avocado ice cream for a perfect Mexican-inspired dessert.
Ingredients:
  • Flesh of 4 avocados
  • Juice of 2 limes
  • 200g caster sugar
  • 300ml thickened cream
  • 4.40 gm vanilla extract
Instructions:
  • Blend avocado and lime juice in a food processor until creamy.
  • Use electric beaters to blend the sugar and cream until smooth. Mix in the avocado and vanilla, whisking until fully combined.
  • Follow the manufacturer's instructions to churn the mixture in an ice cream machine. Alternatively, pour the mixture into a shallow container and freeze until firm at the edges. Beat with an electric mixer, return to the container, and refreeze. Repeat this process 2-3 times. Once done, transfer the mixture to a container and freeze for 4 hours until firm.
