Avocado Ice Cream

Create creamy avocado ice cream - a crowd-pleasing, light dessert loved by all ages!
Ingredients:
  • 3 small avocados, peeled and pitted
  • 1 (12 ounce) can evaporated milk
  • 0.5 cup 1% milk
  • 3 tablespoons lime juice
Instructions:
  • Place water in a saucepan and bring it to a boil. Stir in sugar until dissolved. Once dissolved, bring the syrup back to a boil, then simmer gently until reduced to 1 cup, around 10 minutes. Remove from heat and let it cool.
  • In a mixing bowl, smash the avocados to your liking, smooth or chunky. Add evaporated milk, 1% milk, and lime juice. Combine with the cooled sugar syrup until fully mixed. Refrigerate until completely chilled, around 4 hours.
  • Transfer the chilled mixture into an ice cream maker and freeze following the manufacturer's guidelines. Then, scoop the ice cream into a container with a lid and freeze until solid, for a minimum of 1 hour.
