Indulge in a unique avocado ice-cream treat for dessert.
Ingredients:
  • 3 (about 750g) ripe avocados
  • 42.00 gm lemon juice
  • 395g can condensed milk
  • 270ml can coconut milk
  • 4.40 gm vanilla extract
  • 40.00 ml chopped pistachios
Instructions:
  • Cut avocados in half and scoop out seeds. Transfer flesh to a food processor, then add lemon juice and blend until smooth. Incorporate condensed milk, coconut milk, and vanilla extract, and blend until well combined.
  • Place the mixture in an airtight container, seal it tightly, and freeze it for about 3 hours, stirring occasionally for even freezing, until it's nearly frozen.
  • Transfer the mixture to a clean food processor and blend until smooth. Put it back in the container, cover, and freeze until firm. Allow it to soften slightly before scooping into bowls. Garnish with pistachios before serving.
