Impress guests with this easy, 4-ingredient dessert.
Ingredients:
  • 2 lemons
  • 250g caster sugar
  • 500g mascarpone
  • Poached blueberries or fresh fruit compote, to serve
Instructions:
  • Grate lemon zest finely, being careful to exclude the bitter white pith. Squeeze lemon juice.
  • In a pan over low heat, combine sugar and 450ml water, stirring until sugar dissolves. Add zest and juice, then simmer for 3 minutes. Cool, strain, and discard the zest.
  • In a bowl, combine mascarpone with cooled lemon syrup, whisking slowly. Churn in an ice-cream machine per instructions. Alternatively, freeze mixture in a shallow container for 2-3 hours until slightly frozen. Process in a food processor until smooth. Return to the container and freeze, repeating once more before letting it freeze completely. Serve with poached or fresh fruit.
