Ingredients:
  • 1/2 cup (1 stick, 112 g) butter, melted
  • 1 cup (220 g) tightly packed dark brown sugar
  • 1 egg, lightly beaten
  • 1/4 teaspoon vanilla
  • 8 ounces (225 g) mascarpone cheese
  • 2 tablespoons lemon juice
  • 2 1/2 teaspoons lemon zest
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • Pinch salt
  • 1 cup (128 g) all-purpose flour
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare the 8x8-inch (20x20-cm) pan by lightly buttering and flouring it.
  • Combine the melted butter and sugar: Whisk together in a large bowl until fully incorporated.
  • Incorporate the egg and vanilla by whisking them together. Follow by adding the lemon juice, zest, and mascarpone cheese, and blend until fully combined.
  • Whisk together flour, baking soda, baking powder, and salt, then fold into the wet mixture.
