Lemon and passionfruit barley water

Chill out with zesty lemon and passionfruit barley water.
Ingredients:
  • 65g pearl barley
  • 40.00 ml lemon rind, finely grated
  • 1.5l water
  • 110g caster sugar
  • 185ml lemon juice
  • 60ml fruit juice
  • Lemon, extra (to serve)
Instructions:
  • Rinse 1/2 cup (65g) pearl barley in a sieve until water runs clear. In a saucepan, bring barley, 2 tablespoons finely grated lemon rind, and 6 cups (1.5L) water to a boil.
  • Simmer until barley is tender, strain into a bowl, and discard barley. Mix in 1/2 cup (110g) caster sugar, 3/4 cup (185ml) lemon juice, and 1/4 cup (60ml) strained passionfruit juice. Enjoy!
  • Transfer the mixture into a stylish Coles Cook & Dine Glass Bottle with a chic Ceramic Lid, chill, and then garnish with lemon slices and ice before serving.
