Delicious pork and lemon dish with sweet onion perfect for any special occasion.
Ingredients:
  • 4 pork cutlets, French trimmed
  • 450g Baby Cream Delight potatoes, thickly sliced
  • 2 red onions, cut into wedges
  • 280g btl Sicilian olives, drained
  • 20.00 ml fresh rosemary leaves
  • 250ml (1 cup) salt reduced chicken style liquid stock
  • 42.00 gm lemon juice
  • 1 bunch broccolini, halved lengthways
  • 62.50 ml fresh continental parsley leaves
  • Lemon zest, to serve
Instructions:
  • Heat the oil in a roasting pan until shimmering. Season the pork generously with pepper and sear each side for 2 minutes until nicely browned. Add the potato, onion, olives, and rosemary. Pour in the stock and lemon juice. Bake for 30-35 minutes until the pork is nearly cooked through.
  • Top the flavorful pork mixture with fresh broccolini and bake until the broccolini is just tender. Season to taste and enjoy the delicious flavors!
  • Arrange the pork, potato, onion, and broccolini on plates. Pour the pan juices over the top. Garnish with fresh parsley and lemon zest before serving.
