Tangy lemon asparagus pasta with penne, Parmesan cheese.
Ingredients:
  • 1 (16 ounce) package penne pasta
  • 1 pound fresh asparagus, trimmed and cut into 2-inch pieces
  • 1 large lemon, zested and juiced
  • 1 cup grated Parmesan cheese
  • 0.5 cup olive oil
  • salt to taste
  • freshly cracked black pepper to taste
Instructions:
  • Fill a large pot with salty water and bring to a vigorous boil. Add penne and cook uncovered for roughly 8 minutes, stirring occasionally, until the penne is al dente.
  • Add the asparagus to the pot of boiling penne pasta, allowing it to cook until the pasta is al dente and the asparagus is tender-crisp and vibrant green, approximately 3 minutes. Drain the pasta and asparagus before serving.
  • Combine penne, asparagus, lemon zest, lemon juice, Parmesan cheese, olive oil, salt, and black pepper in a large bowl, gently tossing until well mixed.
