"Simple and delicious 6-ingredient tuna pasta recipe."
Ingredients:
  • 75g dried large shell pasta
  • 2 bunches asparagus, trimmed, cut into 2cm lengths
  • 425g can tuna in springwater, drained, flaked
  • 150g fresh reduced-fat ricotta cheese, crumbled
  • 2 tsp lemon zest
  • 65.63 gm lemon juice
  • 18.20 gm extra virgin olive oil
  • Olive oil
Instructions:
  • Boil the pasta in a large saucepan of salted water according to packet directions until tender, adding asparagus for the last minute. Drain and return to the pan.
  • Combine the tuna, ricotta, lemon zest, and lemon juice, then season with salt and pepper before serving and drizzling with oil.
