Enhance tuna pasta with zesty lemon for a refreshing twist.
Ingredients:
  • 375g spaghetti
  • 250g green beans, trimmed, cut into 3cm pieces
  • 36.40 gm Australian extra virgin olive oil (see note)
  • 2 green onions, thinly sliced
  • 2 tsp finely grated lemon rind
  • 425g can tuna in oil, drained, flaked
  • 250.00 ml fresh flat-leaf parsley leaves, chopped
  • 65.63 gm lemon juice
  • Grated parmesan, to serve
Instructions:
  • Boil pasta in salted water as per packet instructions until tender, adding beans for the final 3 minutes. Save 1/4 cup of cooking liquid before draining.
  • In a large, deep frying pan over medium-high heat, heat oil. Sauté garlic, onion, and lemon rind until fragrant, about 1 minute. Add tuna and cook until heated through, about 1 minute. Stir in pasta, beans, parsley, lemon juice, and reserved cooking liquid. Toss everything together for 2 to 3 minutes until heated through. Season with salt and pepper. Serve with a sprinkle of parmesan on top.
