Spicy tuna pasta salad

Make a simple and nutritious tuna pasta salad for a speedy meal.
Ingredients:
  • 250g linguine
  • 2 x 185g cans tuna in chilli and oil
  • 400g can artichoke hearts in brine, drained, quartered
  • 50g baby rocket
  • 1 avocado, chopped
  • 42.00 gm lemon juice
Instructions:
  • Boil pasta in a large pot of salted water according to package instructions until tender. Drain and rinse with cold water, then drain well.
  • Combine the pasta, drained tuna (reserving the oil), artichokes, rocket, avocado, and chilli-free tuna in a large bowl. Drizzle with lemon juice and season generously with salt and pepper. Gently toss everything together and serve.
