Spaghetti with tuna balls

Whip up speedy spaghetti with tuna balls in 20 minutes for a delicious dinner option!
Ingredients:
  • 400g spaghetti
  • 700ml btl passata (tomato pasta sauce)
  • 125ml (1/2 cup) vegetable liquid stock
  • 200g crusty bread, crusts removed, torn
  • 1 garlic clove, chopped
  • 50g (2/3 cup) finely grated parmesan
  • 2 tsp finely grated lemon rind
  • 425g can tuna in oil, well drained
  • 82.50 ml chopped fresh continental parsley
  • 3 eggs
  • Chopped fresh continental parsley, extra, to serve
Instructions:
  • Cook the pasta in a large pot of perfectly salted boiling water until just tender. Then, drain the pasta.
  • In a frying pan over medium-high heat, combine the passata and stock. Bring to a simmer and cover. Reduce heat to medium and cook for 3 minutes, or until heated through.
  • Once the sauce is simmering, pulse bread, garlic, parmesan, and lemon zest in a food processor until coarse crumbs form. Add tuna, parsley, and eggs; pulse until mixed. Season with salt and pepper, then shape tablespoonfuls of the tuna mixture into balls.
  • Place the tuna balls into the sauce, cover, and cook for 8 minutes or until the tuna balls are fully cooked. Serve the pasta in individual dishes, then garnish with the tuna balls and a sprinkle of extra parsley.
