Spaghetti with tuna, capers and lemon

Delicious tuna pasta with tangy capers and zesty lemon - quick and easy!
Ingredients:
  • 400g spaghetti
  • 18.20 gm brand pure olive oil
  • 3 spring onions, chopped
  • 4 cloves garlic, sliced
  • 125.00 ml brand baby capers
  • Zest and juice of 1 lemon
  • 250g cherry tomatoes, halved
  • 425g can tuna in springwater, drained
  • 220g brand bocconcini cheese, drained, halve
  • 250.00 ml small basil leaves
Instructions:
  • Boil spaghetti in a large pot of salted water following package instructions. Save 1/2 cup of the cooking liquid before draining. Place spaghetti back into the pot.
  • Heat oil in a hot frying pan. Sauté spring onions, garlic, and capers until fragrant. Mix in lemon zest and juice. Toss in tomatoes and cook until skins split. Finally, add tuna and bocconcini, gently combine, and serve.
  • Add the freshly cooked spaghetti along with the basil and a splash of the reserved cooking liquid. Toss everything together until well combined and serve without delay.
