Indulge in this quick and satisfying spaghetti dish.
Ingredients:
  • 375g spaghetti
  • 250.00 ml fresh breadcrumbs
  • 2 tsp fresh lemon thyme leaves, finely chopped, plus extra to serve
  • 20.00 ml fresh flat-leaf parsley leaves, finely chopped
  • 425g can tuna in oil, drained
  • 40.00 ml capers, rinsed
  • 1 avocado, chopped
  • 65.63 gm lemon juice
  • Lemon zest, to serve
Instructions:
  • Prepare pasta according to the package instructions.
  • In a large, deep frying pan over medium-high heat, heat oil and add breadcrumbs, garlic, thyme, and parsley. Stir and cook for 3 to 4 minutes until golden.
  • After cooking the pasta, save 1/4 cup of the cooking water and then return the pasta to the saucepan.
  • Drain the tuna, keeping 1/4 cup of the oil. Combine tuna, reserved oil, capers, avocado, lemon juice, and reserved cooking water with pasta. Season with salt and pepper, then toss to mix. Top with crumb mixture, lemon zest, and extra thyme leaves. Serve and enjoy.
