Tuna and avocado sushi salad recipe

Try a refreshing tuna and avocado salad, inspired by sushi, for a healthy lunch option.
Ingredients:
  • 300.00 gm sushi rice
  • 42.90 gm sushi seasoning
  • 1 large carrot
  • 185g can tuna in olive oil, drained, flaked
  • 4 baby cucumbers, thinly sliced
  • 2 small avocados, sliced
  • 19.80 gm Japanese mayonnaise
  • 6.00 gm sesame seeds, toasted
  • 86.63 gm salt-reduced soy sauce
  • Roasted seaweed, to serve
Instructions:
  • Prepare the rice as instructed on the packet. Spread it onto a large baking tray, then drizzle with seasoning. Gently toss to coat the rice evenly. Allow it to cool before proceeding.
  • Use a julienne peeler to create long, thin strips from the carrot.
  • Fill 4 lunchboxes with rice. Add 1⁄4 of tuna, cucumber, carrot, and avocado to each. Drizzle mayo over tuna and sprinkle with sesame seeds. Divide soy sauce into 4 small containers. Refrigerate until ready. Enjoy with roasted seaweed.
