"Try my irresistible homemade spicy tuna sushi rolls with cool cucumber and creamy avocado."
Ingredients:
  • 0.33333334326744 cup Japanese sushi-style rice
  • 0.33333334326744 cup water
  • 2.25 teaspoons rice vinegar
  • 2.25 teaspoons white sugar
  • 4 ounces sashimi-grade yellowfin tuna, cut into small chunks
  • 3 tablespoons chile oil, or more to taste
  • 1 tablespoon sriracha sauce
  • 1 green onion, diced
  • 3 sheets nori, cut in half
  • 0.5 small ripe avocado, thinly sliced
  • 0.25 English cucumber, cut into matchsticks
Instructions:
  • Place the rice in a strainer and rinse it until the water runs clear.
  • Prepare the sushi rice: Simmer rice and water in a saucepan until tender and water is absorbed, about 20 minutes.
  • In a small saucepan over low heat, gently mix rice vinegar, sugar, and salt until sugar dissolves, about 1 to 2 minutes. Drizzle mixture over rice, stirring until rice cools and appears dry.
  • Combine tuna, mayonnaise, chile oil, sesame oil, sriracha sauce, and green onion in a bowl, using a fork to mix well until you achieve a pleasing texture with a few tuna chunks remaining for added crunch.
  • 1. Place a sheet of plastic wrap over a bamboo sushi rolling mat. 2. Position 1 nori sheet on the mat, with the shiny side facing down. 3. Spread a thin layer of rice evenly over the nori sheet. 4. Arrange sliced avocado on top of the rice. 5. Flip the nori sheet so the avocado is against the mat. 6. Spread a generous layer of the tuna mixture along 3/4 of the back of the nori sheet, then add cucumber matchsticks on top.
  • Wrap sushi tightly with the rolling mat, ensuring ends are tucked in with the plastic wrap. Unwrap and transfer sushi roll onto a plate.
  • Continue layering nori sheets with rice, avocado, tuna mixture, and cucumber until all ingredients are used up.
