Tuna & avocado salad

Make a satisfying tuna salad for a quick and tasty meal.
Ingredients:
  • 200g fusilli pasta
  • 250g green beans, trimmed, cut into 4cm lengths
  • 56.88 gm olive oil
  • 42.00 gm lemon juice
  • a pinch sugar
  • 1 bunch English spinach, trimmed, washed and shredded
  • 200g red grape tomatoes, halved
  • 2 ripe avocados, halved, stone removed, peeled and chopped
  • 425g can tuna in oil, drained and broken into large chunks
Instructions:
  • Boil 200g fusilli pasta for 10 minutes until al dente. Drop in 250g green beans (trimmed and cut into 4cm lengths) for an additional 2 minutes. Drain thoroughly and let cool.
  • In a bowl, mix 1/4 cup of olive oil, 2 tablespoons of lemon juice, 2 teaspoons of Dijon mustard, and a pinch of sugar. Season with salt and pepper. Toss together the cooked pasta, beans, 1 bunch of English spinach (trimmed, washed, and shredded), and 200g of red grape tomatoes (halved).
  • Gently combine 2 halved, pitted, peeled, and chopped ripe avocados with a 425g can of oil-drained tuna broken into chunks and the dressing. Serve promptly.
