Creamy avocado replaces mayo in this fresh twist on tuna salad, with red onion and celery for crunch and a zing of lemon juice.
Ingredients:
  • 1 5-ounce can tuna, preferably packed in olive oil, drained
  • 1/2 ripe avocado, roughly chopped
  • 1/2 cup minced celery
  • 1/4 cup minced red onion
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons chopped fresh cilantro or parsley
  • 1/2 teaspoon kosher salt
  • Freshly ground black pepper
Instructions:
  • Combine all ingredients in a medium bowl. Use a fork to mix, smashing the avocado and breaking up the tuna until well combined.
