Indulge in tangy lemon bar Peeps for a delightful twist on a classic treat!
Ingredients:
  • 1 cup butter, softened
  • 1 teaspoon cornstarch
  • 1.3333333730698 cups white sugar
  • 0.66666668653488 cup lemon juice
  • 0.66666668653488 cup all-purpose flour
  • 4 large eggs
  • 1 tablespoon lemon zest
  • 1 tablespoon mini chocolate chips
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C, gas mark 4) and prepare a 9x13-inch baking dish by lining it with parchment paper.
  • In a bowl, use an electric mixer to blend butter and 1/2 cup sugar until creamy. Mix in 2 cups flour and cornstarch until a dough forms. Press the dough into the bottom of the baking dish.
  • Bake until the crust turns a light golden brown, about 10-12 minutes in the preheated oven.
  • Using an electric mixer, combine 1 1/3 cups sugar, lemon juice, 2/3 cup flour, eggs, and lemon zest in a bowl until smooth. Pour the lemon mixture over the crust.
  • Bake the lemon mixture until firm, for 25 to 30 minutes. Allow it to cool to room temperature in the baking dish. Use cute cookie cutters to make "Peep" shapes and add 2 mini chocolate chips for eyes on each.
