Indulge in the perfect blend of tangy lemon bars and chewy oatmeal cookies with this irresistible lemon oatmeal bar recipe.
Ingredients:

  • 1 cup brown sugar
  • 0.5 cup unsalted butter, softened
  • 1.3333333730698 cups all-purpose flour
  • 1 cup rolled oats
  • 1 teaspoon baking powder
  • 1 (14 ounce) can condensed milk
  • 0.25 cup lemon juice
  • 1 teaspoon lemon extract
  • 1 teaspoon almond extract
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and grease an 8-inch square baking pan with cooking spray.
  • Combine brown sugar and butter in a large bowl until well mixed. In a separate bowl, combine flour, oats, baking powder, and salt. Add the dry ingredients to the butter mixture and mix until combined. Press half of the oat mixture into the bottom of the prepared pan.
  • Bake until beautifully golden brown, approximately 15 minutes in the preheated oven.
  • Combine the condensed milk, lemon juice, lemon extract, and almond extract in a small bowl while the crust bakes.
  • Drizzle lemon mixture over the baked crust, ensuring it covers the surface. Sprinkle on the remaining oat mixture and press gently into the lemon layer.
  • Continue baking in the oven until the filling is firm and the top crust is a beautiful golden brown, typically around 20 minutes.
  • Once baked, allow to cool on a wire rack for a delightful 30 minutes. For optimal flavor, chill in the refrigerator for about 2 hours. Finally, slice into 16 delicious bars.
