Oatmeal-Lemon Crème Bars

Elevate your lemon bars with a delicious oatmeal cookie crust using a convenient mix.
Ingredients:
  • 1/2 cup cold butter
  • 1 pouch (17.5 oz) Betty Crocker™ Oatmeal Cookie Mix
  • 1 egg
  • 1 can (14 oz) sweetened condensed milk (not evaporated)
  • 2 teaspoons grated lemon peel
  • 1/4 cup lemon juice
Instructions:
  • Preheat oven to 350°F and generously coat the bottom of an 8-inch square pan with cooking spray.
  • In a large bowl, combine butter with the cookie mix using a fork or pastry blender until crumbly. Mix in the egg until well incorporated. Press half of the cookie mixture into the bottom of the pan and bake for 15 minutes.
  • Mix condensed milk, lemon peel, and lemon juice in a small bowl until thick. Spread over baked crust. Crumble remaining cookie mixture on top. Bake for an additional 25 minutes until light golden brown. Chill for 30 minutes until set. Cut into bars and store covered in the refrigerator.
