Easy lemon cake with fluffy lemon whipped topping made with cake mix and pudding mix for a bright and zesty dessert.
Ingredients:
  • cooking spray
  • 1 (18.25 ounce) package yellow cake mix
  • 1 (3.4 ounce) package instant lemon pudding mix
  • 1.75 cups water
  • 3 egg whites
  • 0.75 cup nonfat milk
  • 1 (1 ounce) package instant sugar-free vanilla pudding mix
  • 0.5 teaspoon lemon extract
  • 1 (8 ounce) container frozen light whipped topping, thawed
Instructions:
  • Preheat the oven to 350°F (175°C) and generously spray a 10x15-inch baking pan with nonstick spray.
  • Prepare a delectable cake by combining cake mix and lemon pudding mix in a large bowl. Add water and egg whites, then mix on low speed for 1 minute using an electric mixer. Increase the speed to high and continue beating for 4 minutes. Transfer the batter into the prepared pan.
  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Cool completely for 20-30 minutes before serving.
  • Prepare the topping by whipping up milk, vanilla pudding mix, and lemon extract together in a bowl for 2 minutes on low speed. Gently fold in the whipped topping and spread it over the cooled cake before refrigerating.
