Whip up a sensational Mediterranean dish by topping chicken breasts with olives and lemons.
Ingredients:
  • 4 boneless skinless chicken breast halves (1 1/4 lb)
  • 2 teaspoons olive or vegetable oil
  • 1 tablespoon lemon juice
  • 1 teaspoon salt-free lemon-and-pepper seasoning
  • 1/4 cup sliced ripe olives
  • 4 thin slices lemon
Instructions:
  • Preheat the broiler. Grease the broiler pan rack with cooking spray. Slice each chicken breast horizontally from the thickest edge almost to the other side, then spread it out to make it an even thickness.
  • Combine oil and lemon juice in a small bowl. Drizzle over chicken breasts, coating both sides. Season both sides with lemon-and-pepper seasoning. Transfer to a broiler pan rack.
  • Broil chicken 4 inches from heat for about 10 minutes, turning once, until no longer pink in the center. Add olives and lemon slices in the last 2 minutes of broiling for extra flavor.
