Lemon-infused couscous with pine nuts, fresh parsley, and tangy pimentos.
Ingredients:
  • 1 cup chicken broth
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 tablespoon butter
  • 0.66666668653488 cup couscous
  • 1 (2 ounce) jar sliced pimento peppers, drained
  • 2 tablespoons toasted pine nuts
  • 2 tablespoons chopped fresh parsley
Instructions:
  • In a saucepan, combine chicken broth, lemon juice, lemon zest, butter, and salt. Bring to a boil. Stir in couscous until fully coated. Cover the saucepan, remove from heat, and let the couscous soak until most of the liquid is absorbed, approximately 5 minutes.
  • Fluff the couscous gently with a fork, then mix in the vibrant pimento peppers, crunchy pine nuts, and fresh parsley for a burst of flavors and textures.
