Lemon Cream Cheese Bars

Quick and easy lemon bars made with Bisquick Heart Smart® mix, ready in under an hour!
Ingredients:
  • 1 1/2 cups Bisquick Heart Smart® mix
  • 3/4 cup graham cracker crumbs
  • 1/2 cup packed brown sugar
  • 1/2 cup butter or margarine
  • 1/2 cup lemon curd
  • 6 oz 1/3-less-fat cream cheese (Neufchâtel), softened
Instructions:
  • Preheat the oven to 375°F. Grease an 8-inch square (2-quart) glass baking dish. In a large bowl, combine Bisquick mix, graham cracker crumbs, and brown sugar. Using a pastry blender or 2 table knives, cut in the butter until the mixture is crumbly. Set aside.
  • Blend lemon curd and cream cheese together in a small bowl until smooth.
  • 1. Press 2/3 of the crumb mixture into the pan. 2. Spread the cream cheese mixture over the crumbs, leaving a 1/4 inch edge. 3. Sprinkle the remaining crumb mixture on top, gently pressing it into the filling.
  • Bake for 23 to 27 minutes, or until edges turn a light golden brown. Let cool fully. Cut into 6 rows by 5 rows to make bars. Keep stored in the refrigerator.
