Ingredients:
  • 115g butter
  • 175g plain flour
  • 55g caster sugar
  • 3 egg whites
  • 215.00 gm caster sugar
  • 3 tsp lemon rind
  • 126.00 gm lemon juice
  • 50g butter, chopped
Instructions:
  • Preheat your oven to 180C and prepare a shallow cake tin by greasing and lining it.
  • Combine the butter, flour, and sugar in a food processor until they start coming together. Press the mixture into a prepared tin, ensuring the top is smooth. Bake in a preheated oven for 20-25 minutes or until golden brown.
  • Place the egg, egg yolk, sugar, lemon rind, and lemon juice in a heavy-based saucepan and whisk together. Add the butter and cook over medium heat, whisking for 7-8 minutes. Remove from heat and let it stand for 5 minutes. Transfer the mixture into a bowl, cover the surface with plastic wrap, and let it cool completely.
  • After the base and lemon curd have cooled, pour the curd over the base and chill in the fridge until serving time.
