Whipped lemon mousse slice with fluffy biscuit base - only 4 simple ingredients for a luscious treat!
Ingredients:
  • 85g packet lemon jelly crystals
  • 250ml (1 cup) boiling water
  • 14 savoiardi (sponge finger biscuits)
  • 435ml (1 3/4 cups) thickened cream
  • 130g (1/2 cup) lemon curd
Instructions:
  • In a heatproof bowl, add the jelly crystals. Pour boiling water over them and stir until the crystals dissolve. Allow the mixture to cool slightly for about 5 minutes, stirring occasionally. Refrigerate for 1 hour until chilled and thickened, but not fully set.
  • Line a 23cm square cake pan with baking paper, leaving a 5cm overhang. Place sponge finger biscuits on the base to cover, trimming if needed.
  • Using electric beaters, whip cream in a large bowl until soft peaks form. Slowly incorporate the jelly mixture and continue beating until firm peaks form. Spread the lemon cream mixture over the biscuit base, smoothing the top. Drop spoonfuls of lemon curd over the lemon cream, then swirl them together using a knife or skewer. Chill in the fridge for 5 hours or overnight until firm.
  • Place the slice onto a chic serving board. Cut the slice into 20 pieces using a knife that has been dipped in hot water.
