Simplify your brunch party prep with this impressive Bisquick™ coffee cake.
Ingredients:
  • 2 1/2 cups Original Bisquick™ mix
  • 2 eggs
  • 1 cup sugar
  • 3/4 cup milk
  • 2 tablespoons grated lemon peel
  • 2 tablespoons lemon juice
  • 2 tablespoons melted butter
  • 1/4 cup sugar
  • 1 tablespoon grated lemon peel
  • 2 teaspoons lemon juice
  • 1/2 cup Original Bisquick™ mix
  • 3 tablespoons cold butter, cubed
Instructions:
  • Preheat oven to 350°F and generously coat a 13 x 9-inch pan with cooking spray.
  • Combine 2 1/2 cups of Bisquick™ mix in a large bowl. In another bowl, whisk together 2 eggs, 1 cup sugar, milk, 2 tablespoons lemon peel, and 2 tablespoons lemon juice until smooth. Gently incorporate this mixture into the Bisquick™, then add melted butter. Transfer the batter to a pan and spread evenly.
  • In a medium bowl, use an electric mixer on medium speed to blend the Cream Cheese Mixture ingredients until smooth. Spoon dollops of the mixture all over the batter, then swirl it in using a butter knife.
  • Combine 1/2 cup Bisquick™ mix, 1/4 cup sugar, and 1 tablespoon lemon peel in a bowl. Add cold butter and blend using a pastry blender or pinch with your fingers until you achieve a sandy texture. Sprinkle streusel over the batter.
  • Bake for 30 to 35 minutes until a toothpick inserted in the center comes out clean and the cake's edges are golden brown. Allow the cake to cool on a rack for at least 20 minutes before serving.
