Delicious Swiss roll with tangy lemon curd, perfect make-ahead dessert with only 6 ingredients. Customize with your favorite jam for a flavorful contrast.
Ingredients:
  • 75g (1/2 cup) self-raising flour
  • 35g (1/4 cup) custard powder
  • 375ml (1 1/2 cups) milk
  • 100g (1/2 cup) caster sugar, plus 55g (1/4 cup) extra
  • 75g (1/4 cup) bought lemon curd
Instructions:
  • In a saucepan, combine the custard powder with 2 tbsp of milk until smooth. Mix in 2 tbsp of sugar and the rest of the milk. Heat over medium-low heat, stirring constantly until the mixture simmers. Continue cooking and stirring for 2 more minutes until slightly thickened. Transfer to a heatproof bowl and let cool for 5 minutes, stirring occasionally. Cover with plastic wrap and refrigerate for 2 hours until chilled.
  • While the oven preheats to 190C/170C fan forced, generously grease a 24 x 30cm Swiss roll pan and line it with baking paper, ensuring the paper overhangs the sides.
  • Beat eggs using electric beaters in a large bowl for 2 minutes or until well combined. Slowly incorporate sugar while beating for 3 minutes or until pale and creamy. Sift in flour and fold with a spatula until just combined. Pour into the prepared pan, spread gently over the base. Bake for 10 minutes or until the surface is dry and cake springs back when touched.
  • Lay a clean tea towel on a work surface and top it with a sheet of baking paper. Sprinkle the remaining extra sugar on the paper. Flip the hot cake onto the sugared paper, remove the baking paper from the base, then use the tea towel to gently roll the cake into a log starting from a short end. Place the rolled cake seam-side down on a wire rack and let it cool completely for about an hour.
  • Whisk the custard until smooth using a wire whisk (some lumps are okay). Spread the cooled cake with lemon curd, leaving a 3cm gap at each short end. Top with the custard and roll the cake carefully to enclose the filling.
  • Present the dish on a beautiful serving platter and slice before serving.
