Lemon poke cake with zesty lemon Jell-O® for a burst of flavor.
Ingredients:
  • 1 (18.25 ounce) package lemon cake mix
  • 1 (3 ounce) package lemon flavored Jell-O® mix
  • 0.75 cup vegetable oil
  • 0.5 cup water
  • 4 eggs
  • 0.33333334326744 cup lemon juice
  • 2 cups confectioners' sugar
  • 2 tablespoons butter, melted
  • 1 tablespoon water
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and generously grease and flour a 9x13-inch pan.
  • Combine cake mix and gelatin mix in a large bowl. Create a well in the center and add oil, 1/2 cup water, and eggs. Mix on low speed until combined, then scrape the bowl and beat for 4 minutes on medium speed. Pour the batter into the prepared pan.
  • Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted in the center comes out clean. Cool before serving.
  • For the Glaze: Mix lemon juice and confectioners' sugar in a medium bowl, then blend in melted butter and 1 tablespoon water. Poke holes in the cake's top and drizzle the glaze on top.
