Ingredients:
  • 9.20 gm peanut oil
  • 4cm piece fresh ginger, peeled, grated
  • 3 garlic cloves, finely chopped
  • 2 lemon grass stems, pale section only, finely chopped
  • 500g lean pork mince
  • 1 large red capsicum, quartered, deseeded, diced
  • 8 green shallots, thinly sliced
  • 48.80 gm oyster sauce
  • 125mls (1/2 cup) chicken style liquid stock
  • 315g (1 1/2 cups) jasmine rice
  • 4 iceberg lettuce leaves
Instructions:
  • In a large wok over medium heat, warm the peanut oil until shimmering. Add the ginger, garlic, and lemongrass, and stir-fry for 1 minute.
  • Cook the pork mince until browned, then add the capsicum and green shallots and stir-fry for an additional minute.
  • In a small bowl, whisk together the cornflour and oyster sauce until smooth. Pour in the stock and mix well. Add this mixture to the pork and cook, stirring, until it boils and thickens.
  • While the flavors meld together beautifully, prepare the rice according to the package instructions until it reaches a perfect tenderness. Present the flavorful mince mixture in crisp lettuce leaves alongside the fluffy rice.
