Lemon Meringue Cupcakes

Moist lemon cupcakes with tangy lemon curd filling and fluffy meringue topping - a delightful twist on the classic lemon meringue pie, ideal for a special treat!
Ingredients:
  • 0.66666668653488 cup lemon juice
  • 3 large eggs
  • 5 tablespoons white sugar
  • 1 tablespoon lemon zest
  • 3.5 tablespoons salted butter, cut into small pieces
  • 1.25 cups all-purpose flour
  • 0.75 cup white sugar
  • 1.5 teaspoons baking powder
  • 0.25 cup vegetable oil
  • 0.5 teaspoon vanilla extract
  • 1 large egg
  • 0.5 cup hot water
  • 3 large egg whites
  • 0.75 teaspoon lemon juice
Instructions:
  • In a small saucepan over low heat, mix together lemon juice, eggs, sugar, and lemon zest for the lemon curd. Keep whisking constantly until thick enough to coat the back of a spatula or spoon, approximately 10 minutes. Remove from heat, strain through a sieve into a bowl, and stir in melted butter. Set aside.
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare a 12-cup muffin tin with paper liners.
  • In a large bowl, combine sifted flour, sugar, baking powder, and salt. Add milk, oil, vanilla extract, and egg to the dry ingredients. Mix well using an electric mixer or by hand. Stir in hot water until combined to create a thin batter. Fill muffin liners 3/4 full with the batter.
  • Bake in the preheated oven for 15 to 18 minutes or until the tops spring back when lightly pressed. Allow to cool in the tin for 5 minutes, then transfer to a wire rack to cool for about 20 minutes.
  • Create a hollow center in each cupcake using a corer or knife, then generously fill it with zesty lemon curd.
  • Combine sugar and egg whites in a large bowl. Set the bowl over a pot of simmering water. Whisk continually until sugar dissolves and egg whites reach 120-140°F (49-60°C) on a thermometer, about 4-6 minutes. Remove from heat.
  • Whisk lemon juice into the mixture until it forms stiff peaks, then pipe the meringue onto the cupcakes.
  • Position the oven rack 10 inches from the heat source and preheat the broiler.
  • Broil cupcakes until meringue is golden brown, for about 2 minutes.
