Get creative making delicious and fun cupcakes, mini works of art that are as enjoyable to make as they are to eat.
Ingredients:
  • 2 tsp lemon rind
  • 100g butter, softened
  • 200g caster sugar
  • 2 tsp finely grated lemon rind
  • 2 eggs
  • 225g self-raising flour
  • 125ml milk
  • 1 egg, lightly whisked
  • 50g butter
  • 60ml lemon juice
  • 100g caster sugar
  • 3 eggwhites
  • 155g caster sugar
Instructions:
  • Preheat your oven to 180°C and prepare twelve 1/3-cup (80ml) muffin pans by lining them with paper cases.
  • Utilize an electric mixer to blend the butter, sugar, and lemon zest until light and fluffy. Incorporate the eggs one by one, ensuring thorough mixing after each addition. Alternate adding the flour and milk in batches, gently stirring with a wooden spoon until just blended.
  • Divide the mixture equally among the prepared pans and gently level the surface. Bake in a preheated oven for 15-20 minutes or until fully cooked. After baking, cool the pans on a wire rack until completely cooled.
  • To prepare the lemon curd, gently mix the egg, butter, lemon rind, lemon juice, and sugar in a small saucepan over low heat. Stir constantly for 5 minutes until the mixture boils and thickens. Take off the heat, strain into a clean bowl through a fine sieve, cover with plastic wrap, and chill in the fridge to thicken.
  • With a small knife, carefully carve a V-shaped piece from the top of each cake, making sure it is about 1.5cm deep, and leave a 2cm-wide edge. Fill the cupcakes with lemon curd evenly.
  • In a clean, dry bowl, whisk egg whites with an electric mixer until firm peaks form. Gradually add sugar, beating well after each addition. Beat for 2-3 minutes until sugar dissolves. Spoon meringue on top of each cake, shaping peaks with a knife and covering the filling. Use a brulee torch to lightly grill the meringue until golden, or place cupcakes on an oven tray and grill until golden.
