Delightful lemon meringue biscuits, ideal for a cozy afternoon tea pairing.
Ingredients:
  • 1 eggwhite
  • 53.75 gm caster sugar
  • 50.00 ml lemon butter
  • icing sugar mixture, to serve
Instructions:
  • Preheat your oven to 150°C/130°C fan-forced and prepare 2 baking trays by lining them with baking paper.
  • Beat egg whites with an electric mixer until stiff peaks form. Add caster sugar and continue beating for 8 minutes or until sugar is fully dissolved.
  • Transfer the mixture into a piping bag with a 5mm fluted or plain nozzle. Pipe 2cm wide swirls of mixture on trays, leaving 2cm between each for spreading. Bake for 8 to 10 minutes until meringues are firm. Turn off the oven and cool with the door slightly open.
  • Assemble 2 meringues with a generous 1/2 teaspoon of lemon butter. Continue with the rest of the meringues and lemon butter. Finish by sprinkling with icing sugar before serving.
