Little lemon meringue kisses

Make delightful meringue kisses for a whimsical dessert.
Ingredients:
  • 215.00 gm caster sugar
  • 4 egg whites
  • 1 tsp finely grated lemon rind
  • 5.30 gm lemon juice
  • Yellow gel food colouring
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced, then grease and line 2 large baking trays with baking paper.
  • Evenly coat 1 prepared tray with sugar. Bake for 5 to 6 minutes until the sugar's edges begin to melt. Take out of the oven and lower the temperature to 100°C/80°C fan-forced.
  • Beat egg whites in an electric mixer until soft peaks form. Gradually add sugar in a steady stream while beating. Continue to beat for 5 to 6 minutes until sugar is dissolved. Mix in lemon rind and juice until combined.
  • Create colorful stripes within the piping bag by running a skewer dipped in food coloring down the sides. Then, fill the bag with half of the meringue mixture and pipe evenly spaced circles (about 4cm in diameter) onto the tray. Replace the stripes in the piping bag using more food coloring and fill the bag with the remaining mixture. Repeat the piping process on the tray.
  • Bake for 45 minutes or until set. Allow dish to cool completely in turned off oven with door closed. Serve.
