Easy and elegant lemon meringue tarts, perfect for entertaining with only 5 ingredients.
Ingredients:
  • 1 Free Range Egg white
  • 55g caster sugar
  • 2 sheets filo pastry
  • 280g yoghurt
  • 40.00 ml lemon curd
Instructions:
  • Preheat your oven to 100°C and line a baking tray with parchment paper for easy cleanup.
  • Whisk the egg white in a clean, dry bowl with an electric mixer until soft peaks form. Gradually add the sugar, 1 tablespoon at a time, whisking well after each addition, until the sugar dissolves and the mixture is thick and glossy.
  • Use a piping bag with a 1cm plain nozzle to pipe 24 meringues onto a lined tray. Bake for 30 mins until dry to the touch, then let them cool.
  • Preheat oven to 160°C. Grease two 12-hole, 11⁄2-tbs (30ml) mini muffin pans with olive oil spray. Layer 2 filo sheets, spraying each layer with olive oil. Cut into 24 squares. Place filo squares in the pans. Bake for 10 minutes until golden. Allow to cool completely.
  • Combine the yogurt and lemon curd in a small bowl, gently swirling to create a marble effect. Spoon the mixture into filo tarts and generously top with meringues. Display beautifully on a serving platter.
