Instructions:
  • Preheat your oven to 180°C. Spread pine nuts on a baking tray and toast until golden, about 4-5 minutes. Let them cool on a plate.
  • In a food processor, combine pine nuts, mint leaves, garlic, lemon rind, and lemon juice. Pulse until finely chopped, scraping down the sides as needed.
  • While the blender is running, gradually pour in the oil in a continuous, thin stream and blend until the sauce is creamy. Make sure to taste and add salt and pepper as needed.
