Keep chicken breasts juicy by brining them before cooking.
Ingredients:
  • 6 x 120g small chicken breast fillets
  • 2 lemons
  • 6 fresh bay leaves
  • 100ml extra virgin olive oil
  • 2 tsp torn marjoram leaves
  • 1/2 small Spanish onion, finely chopped
  • 1 clove garlic, finely chopped
  • 60ml (1/4 cup) red wine vinegar
  • 7.20 gm honey
  • Pinch dried chilli flakes
  • 62.50 ml finely chopped spearmint leaves
Instructions:
  • Separate the tenderloins from the chicken and set aside. Pound the chicken evenly with a meat mallet. Slice 1 lemon into 6 thin slices. Put a lemon slice on each chicken breast, add a bay leaf, and tie with kitchen string. Place the prepared chicken in a dish, squeeze the leftover lemon juice over it, drizzle with 2 tablespoons of oil, and sprinkle with marjoram.
  • Place onion in a bowl and cover with boiling water. Let it stand for 5 minutes, then drain well. Return the onion to the bowl and add the remaining oil and remaining ingredients. Season with sea salt and freshly ground black pepper.
  • Heat up the grill to medium heat. Season the chicken and grill it, starting with the plain side down, for 2 minutes until white around the edges. Flip it and cook for another 2 minutes or until fully cooked. Serve the chicken with a drizzle of sauce.
