Minty rum cocktail, a perfect balance of sweet and sour for a refreshing start to any meal.
Ingredients:
  • 60g (1/4 cup) white sugar
  • 12 sprigs fresh mint
  • 1 lemon, thinly sliced
  • 300ml fresh lemon juice
  • 250ml (1 cup) rum
  • 250.00 ml crushed ice
  • Soda water, chilled, to serve
Instructions:
  • In serving glasses, evenly distribute the sugar and half of the mint. Use a fork to muddle the mint into the sugar.
  • Distribute the lemon and remaining mint evenly into the glasses.
  • In a large jug, mix the lemon juice and rum. Divide the lemon juice mixture among the glasses. Add ice and soda water on top. Serve promptly.
