Homemade Lemon Mousse Cake: Layers of zesty lemon cake filled and frosted with a tangy whipped lemon frosting. Perfect for any occasion or as a sweet treat!
Ingredients:
  • 1 box Betty Crocker™ Delights Super Moist™ Lemon Cake Mix
  • Water, vegetable oil and eggs called for on cake mix box
  • 2 tubs (12 oz) Betty Crocker™ Whipped Vanilla Frosting
  • 3/4 cup lemon pie filling (from 15- to 16-oz can)
Instructions:
  • Preheat oven to 350°F (or 325°F for dark or nonstick pans) and follow the box instructions to make, bake, and cool cake in 2 (8- or 9-inch) round cake pans.
  • Blend frosting and pie filling in a medium bowl.
  • Place one cake layer, with the rounded side facing down, on a serving plate. Cover it generously with 1 cup of the delectable lemon mixture, ensuring you stop 1/4 inch away from the edges. Add the second cake layer on top. Frost the sides and the top of the cake with the rest of the luscious lemon mixture. Store the cake in the refrigerator, lightly covered.
