Vibrant veggies with zesty lemon and aromatic thyme elevate this orzo salad, perfect for outdoor gatherings. Opt for chopped zucchini and carrots for quicker prep, ensuring to sauté them a bit longer before mixing with orzo.
Ingredients:
  • 1 tablespoon olive oil
  • 1 cup uncooked orzo pasta
  • 1 clove garlic, crushed
  • 1 medium zucchini, shredded
  • 1 medium carrot, shredded
  • 1 (14 ounce) can vegetable broth
  • 1 lemon, zested
  • 1 tablespoon chopped fresh thyme
  • 0.25 cup grated Parmesan cheese
Instructions:
  • 1. Heat the oil in a pot over medium heat until shimmering. Add the orzo and sauté for 2 minutes until it turns golden. Next, add the garlic, zucchini, and carrot, and cook for another 2 minutes. Pour in the broth and stir in the lemon zest. Bring to a boil, then lower the heat and simmer gently for 10 minutes until the orzo is tender and the liquid is absorbed. Finally, season with thyme and sprinkle with Parmesan before serving.
