Lemon-pepper cod fillets seared to perfection. Served with buttery rice pilaf and fresh green salad.
Ingredients:
  • 3 tablespoons vegetable oil
  • 1.5 pounds cod fillets
  • ground black pepper to taste
Instructions:
  • Heat oil in a large skillet over medium-high heat. Add fillets and drizzle with juice from half a lemon. Season with pepper. Cook for 4 minutes, then flip the fillets. Drizzle with juice from the remaining lemon and season with more pepper. Cook until fillets are flaky.
