Delicious prawn pasta perfect for barbecues or a light lunch.
Ingredients:
  • 375g tortiglioni pasta
  • 500g cooked cocktail prawns
  • 1 bunch basil, leaves only
  • 2 shallots, trimmed, chopped
  • 1 long green chilli, chopped
  • 36.40 gm extra virgin olive oil
  • Zest and juice of 1 lemon
  • 25g parmesan
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
Instructions:
  • Add prawns to the almost tender pasta in the boiling salted water for the last minute of cooking to heat through. Drain well before serving.
  • Blend or process basil, shallots, chili, oil, lemon zest, lemon juice, and Parmesan until smooth. Season to taste, then transfer the flavorful pesto into a large serving bowl. Add pasta and prawns, tossing until fully combined. Serve promptly for a delightful meal.
