Delightful mini lemon pineapple cupcakes - perfect for kids and parties!
Ingredients:
  • 1 (8 ounce) can DOLE® Crushed Pineapple
  • 1 (18.25 ounce) package white cake mix
  • 1 (3 ounce) package lemon flavored gelatin
  • 0.75 cup water
  • 0.33333334326744 cup vegetable oil
  • 1 (16 ounce) can prepared vanilla frosting
  • Multi-colored sprinkles, as needed
Instructions:
  • Preheat the oven to 350 degrees F and prepare a mini-muffin pan with mini-cupcake papers that are 1-1/2 inches in diameter.
  • Combine pineapple with its juice, cake mix, gelatin, eggs, water, and oil in a spacious bowl. Fill each cupcake paper with a level tablespoon of the mixture.
  • Bake for 10-12 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the cakes to cool completely on wire racks. Frost the cakes with a small flower design using a piping bag, and finish by decorating with sprinkles.
