Pineapple Lemon Cheese Pie

My timeless, crowd-pleasing recipe always leaves them begging for more.
Ingredients:
  • 1 (8 ounce) can crushed pineapple, drained with juice reserved
  • 0.5 cup water
  • 1 (3 ounce) package lemon flavored Jell-O® mix
  • 1 (8 ounce) package cream cheese
  • 0.25 cup confectioners' sugar
  • 2 cups frozen whipped topping, thawed
  • 1 (9 inch) prepared graham cracker crust
  • 0.25 cup graham cracker crumbs
Instructions:
  • Mix pineapple juice and water until they total one cup. Pour the mixture into a medium saucepan and bring to a boil. Stir in gelatin until fully dissolved, then set aside.
  • Combine cream cheese, sugar, and pineapple in a large bowl until smooth and creamy. Gradually incorporate the gelatin mixture while continuing to beat. Refrigerate the mixture until it starts to thicken, ensuring it doesn't fully set.
  • Take out of the refrigerator and gently mix in the whipped topping. Transfer the entire mixture into the graham cracker crust. Optionally, sprinkle graham cracker crumbs on top of the pie before chilling in the refrigerator for approximately an hour.
