Delicious lemony biscuits with a crispy texture enhanced by polenta.
Ingredients:
  • 200g unsalted butter, softened
  • 150g caster sugar
  • Finely grated zest of 2 lemons
  • 4 egg yolks
  • 300g plain flour
  • 150g polenta
Instructions:
  • Preheat your oven to 200°C and prepare 2 baking trays by lining them with baking paper.
  • In an electric mixer, combine butter, sugar, and lemon zest until light and creamy. Gradually add egg yolks one at a time, beating well after each addition.
  • Begin by gently sifting the flour and a pinch of salt into a bowl, followed by stirring in the polenta. Combine the dry ingredients with the egg mixture and beat until well mixed.
  • Gently knead for 1-2 minutes until a dough ball forms. Wrap the dough in plastic wrap and chill for 30 minutes, or until it's firm.
  • Roll out the dough on a floured surface to 5mm thickness, then cut out circles with a 6cm pastry cutter. Gently transfer the biscuits to trays using a palette knife. Bake for 10-12 minutes until light golden, then cool on wire racks.
  • Store the biscuits in an airtight container for freshness for up to 1 week.
